With our PEKINGER yoghurt culture, we have added another yogurt starter from China to our range. These and many other old natural yoghurts are becoming increasingly rare, at least in Europe. In the USA, for example, this yoghurt variation is more common. It is important to keep these old traditional varieties alive. We would like to contribute a part with our work :-)
What does PEKING yogurt taste like?
The bacteria that are responsible for the Beijing yogurt originate in fermented rice. While we like to enjoy all the homemade natural yoghurts pure, the Chinese have a different preference for their Beijing yoghurt. Traditionally, fermented yogurt is accompanied by sugar, honey and milk. Maybe a little too sweet for our taste ;-)
Our delicious yogurt starter is a so-called heirloom variety. This means that once you have taken care of the yoghurt culture and made Piima natural yoghurt yourself, you can vaccinate again and again. It's like milk kefir, water kefir, kombucha. In principle, once you have the starter bacteria, you can endlessly make yoghurt yourself and pass it on :-) This yogurt starter ferments thermophilically. Thermophile means that the yogurt would be needed for fermentation. A yogurt maker is recommended for the fermentation of thermophilic yoghurt cultures.
