The naturally occurring microorganisms ensure that the bread rises beautifully and that no additional baker's yeast is required. A huge plus for the people of us who suffer from a baker's yeast allergy. This traditional and simple process enables us to ensure that our organic sourdough contains no artificial colors or preservatives.
