Chocolate muffins with raisins and kombucha – A combination worth trying

I wish you a wonderful day,

today I´ve an extraordinary combination for you again. My new kombucha recipe with chocolate muffins and raisins. Of course, this Thermomix recipe is also very easy done with a hand mixer.

Did you know that the English muffins consist of a yeast dough and look like flat little pancakes? These are not baked but toasted …. But our muffins, in this recipe, like the American muffins with baking soda baked in a baking tin in the oven … Let’s start right!

For this delicious kombucha recipe you need the following ingredients:

  • 200 g spelled flour (I used whole spelled flour)
  • 100 g wheat flour (I used wheat whole grain)
  • 150 ml organic kombucha* (You can order your complete set here*)
  • 1 small banana
  • 2 teaspoons of baking soda
  • 150 ml vegetable milk (my article to make your own plant milk can be found here: make vegetable milk yourself
  • 150 g butter important: the butter should be soft
  • 150 g coconut sugar* (you can easily order this here*)
  • 4 tablespoons raw cocoa
  • 40 g raisins / sultanas* (you can easily order them here* online)

If you have the ingredients, we can start immediately:

  1. Fill your muffin baking tin with paper cups (Alternatively: grease the baking tin and sprinkle with flour).
  2. Add the ingredients (flour, organic kombucha, vegetable milk, soft butter, coconut blossom sugar, baking soda, raw cocoa) to the Thermomix.
  3. Peel the banana and put in pieces also in the mixing pot.
  4. Stir everything at speed 5 for 20 seconds.
    → Without Thermomix, place all ingredients (except the sultanas / raisins) in a mixing bowl and mix well with a hand mixer.
  5. Add raisins / sultanas and stir (10 seconds at level 4, counterclockwise)
    → Without Thermomix, stir in the raisins / sultanas briefly with the hand mixer.
  6. Preheat the oven (circulating air 180 ° C) and push the grate into the second rail from below.
  7. Fill the individual muffin cups with dough at least 2/3 with dough until the whole dough is used up.
  8. Place the baking dish on the grid and bake for 30 minutes (at 180 ° C).
  9. Remove the ready-baked muffins from the oven and let cool with the mold on the wire rack for about 10 minutes.
  10. Then remove the muffins (be careful they are still hot) from the baking tin and let cool on the wire rack.

And now – just serve & enjoy.
