I love to eat Salads. Especially, if I don’t feel hungry anymore afterwards. That’s why I decide to show you this yummy recipe with bulgur.
But first of all I would like to tell you something about bulgur.
Bulgur is one of the main dishes in most oriental parts of the world. It got famous in Germany over the last few years. Even though bulgur contains a lot of important ingredients as phosphor, Calcium, magnesium and B-& E- Vitamins. Those Vitamins and Minerals stay inside the bulgur due the whole processing process of the grain. It is made of Durum wheat-Garcia. After the semolina is soaked and steamed , the drying process starts. In the end the dry bulgur is prepared in different degrees of fineness ground. Good thing about bulgur is the easy and fast way of using it, because it was already steamed during the manufacturing process.
In addition to salad leaves and vegetables, the dressing and sauce is very important for the flavour. This is where I would like to add the tasty and sour Milk kefir. This adding is going to make the salad a healthy probiotic meal.
And this is what you need:
- 200gr Bulgur – Buy your Bulgur from here*
- 12 small Spring Onions
- 12 small Peppers
- 1 Kg Goatcheese – good Goatcheese can be found here*
- 6 small Tomatoes
- 2 Mint Stalks – get them here*
- 150 ml of Kefir – my delicious organic Kefir waits here* for you
You have everything you need? Let’s start!
- Boil the Bulgur in 300 ml of water and a bit of soup broth
As I already wrote before: Making Bulgur goes pretty fast. - During this step of preparing, you can start with the Mint Dressing
Take off the Mint Leaves of the stalk and cut them into small pieces.
Fresh Mint ist he best ingredient you can take for the salad. I use fresh mint from my garden. There are a lot of different mint types. I already have a few I use very often. I even swap to get new types of mint from my friends. You can find some different types here*
If you have a look at the page, you even find some small herbal cubes you can use as a perfect little present. - Put the Kefir and mint together into a bowl and season it with salt and pepper
- Cut the tomatoes into small cubes
- Take of the Pepper stones and cut the Pepper into small cubes
- Slice the spring onion into small stripes
- Crumble the goat cheese on top of the salad
- Put the cooked Bulgur with the other ingredients into a bowl and mix it carefully
- Serve it with the mint dressing on top

For me the dressing is the most important ingredient of the salad. It fits perfectly to the healthy Kefir because its vital and probiotic ingredients stay inside the dressing.
