Watermelon salad with mint and water kefir – Double hydropower brings twice the refreshment

Hello my dear water kefir fans,

in the great weather, what is ahead of us, I was inspired today by cheeky fruits. This water kefir recipe is just right for hot days.

Hardly any other fruit reminds me so much of summer, like the watermelon. For me they emit southern flair, so I feel almost like on vacation. For this very simple water kefir recipe you need these ingredients:

  • 250 g Natural Tofu
  • 2 Spring onions
  • 100 g Olives (pitted)
  • ¼ tsp Himalaya rock salt* (your can order your organic Rock Salt here*)
  • 3 pinches Pepper
  • 3 tbsp Olive oil
  • 25 ml your own organic water kefir* (you can order the starter complete set here*)
  • ¾ Watermelon
  • a handfull of mint leafs

If you have the ingredients, we can start immediately:

  1. Put the natural tofu in a large salad bowl and crush with the fork.
  2. Wash the spring onion and cut into small pieces and add to the bowl of tofu.
  3. Add the olives to the salad bowl with salt, pepper, olive oil and your organic water kefir.
  4. Wash the mint, remove the mint leaves from the stem and divide into coarse pieces (also by hand) and then add to the other ingredients.
  5. Split the watermelon in the middle and slice it so that you can cut off the edge well. Then cut the melon into bite-sized pieces / cubes and place in the bowl.
  6. Mix everything well and you’re done.
