    Serves: 4 Cooking Time: 10

    Ingredients

    • At least 30g organic live water kefir grains (japanese water crystals, tibicos)
    • 80g original Natural-Kefir-Drinks sugar
    • 30g original Natural-Kefir-Drinks dried fruits (organic but at least not sulphurated)
    • 2 lemon slices (organic but at least untreated)
    • 1 litre water
    • One fermentation tank made of plastic, glass or ceramic
    • One rubber band
    • 1 sheet of wrapping film (not breathable) to cover the fermentation vessel
    • One sieve made from plastic
    • One spoon made from plastic
    • One funnel made from plastic
    • One glass or a bottle

    Instructions

    1

    Fill the vessel with the desired volume of water, add about 80 g sugar per litre and stir it until the sugar is completely dissolved.

    2

    Add the water kefir grains (30g or 2-3 Tablespoons) without the water kefir drink.

    Add the dried fruits and the thin slices of lemon.

    Now cover the vessel with the wrapping film and the elastic band - the formed carbonic acid must be able to escape (!).

    Place it at a place inside with room temperature.

    After 1 - 3 days the fermentation process has completed, and you can fill the drink through a sieve into another glass or into bottles. Remove the dried fruits and the slices of lemon.

    Rinse the water kefir grains thoroughly with cold to lukewarm water.

    Clean the fermentation vessel thoroughly with washing up liquid and subsequently rinse it with hot water. Make sure that there are no dish washing left overs inside the glass.

    Even after years of experience, we are all fascinated by each single culture we have and their special characteristics and tastes.

    Today, I would like to present you our water kefir. Also known as: Japanese crystals, Japanese seaweed, crystal seaweed, Himalaya crystal seaweed or water kefir mushroom. Those small barely visible lumps of which water kefir is made of, look like little crystals where the water kefir crystals have their name from.

    What is water kefir?

    Water kefir is a symbiotic composition of lactic acid bacteria and yeasts. In combination with sugar and dried fruits they produce a tasty kefir drink. The sugar in this case is the broth for the water kefir cultures. It depends on the fermentation time how the taste of your water kefir drink is going to be. It varies from sweet lemonade to bitter lemon or young wine (Fedderweisse).

    Could brewing water kefir at home be unhealthy?

    If you brew your own kefir at home it is not in an sterile environment as it is in our production. But don’t worry, the water kefir drink is very acidic which makes it nearly impossible for foreign germs and bacteria to grow. But sometimes harmless yeasts like kahmyeasts or mucus yeasts can grow. What you can do when this happens to your kefir you can read here . Mould is very rare, and we never had any of it in our production.

    Does kefir have alcohol?

    Yes, during the fermentation process yeast is using the sugar and builds carbon acid and alcohol. The lactic acid bacteria need the alcohol and other nutrition to build lactic acid. This is what gives the kefir a slightly sour taste.

    All in all, you can say: the longer you let you water kefir ferment, the more alcohol the drink gets. It varies between 0,1% and if you let it ferment for a very long time up to 2,5% of alcohol. But don’t panic: if you compare those numbers with other products in our everyday life, you will find out that water kefir does not contain as much alcohol as you thought it would have. For example, apple juice has an alcohol content up to 0,38%, grape juice up to 1% and vinegar up to 1,5%.

    How much water kefir can I drink?

    Every person reacts differently to kefir. You should carefully watch your body reaction to drinking water kefir. For kefir beginners we recommend to start with 1 glass (ca.200ml) per day. If you don’t get any problems with it, you can slowly increase the amount of drinking your selfmade water kefir. A lot of kefir lovers drink up to 1 litre per day.
