In July the BBQ season is in full swing. I love to sit in my garden, to sniff the smoky air and to fully enjoy summer time. Before enjoyment can start on my terrace, I enjoy being in my kitchen to try out various salads that go great with grilled food.

As you might know I am happy to experiment new stuff which is why I do not only use ordinary ingredients like green salads, tomatoes and cucumbers but also bulgur, couscous or lentils.

The latter I could eat every day because lentils taste very good and are a healthy alternative to pasta and bread. What is inside these little seeds and where do they originally come from?

Lentils originate from eastern regions on the planet like for example India, where they are used for the famous and popular dish called ‘dhal’. Here in Germany lentils used to be a “poor man’s food” for a very long time since they are cheap, saturating and can be stored for longer periods. In the meantime this legume has lost its unattractive reputation and is said to be rich in vitamins and nutrients. Simply the different colours transform lentils into real eye-catchers when being served.

Lentils have been cultivated for more than 8000 years and therefore are one of the oldest cultivated plants. They come in various colours and sizes and are used in different ways in the kitchen. The little red lentils as well as the black beluga lentils are especially suitable for salads. The bigger kinds like for example yellow lentils are rather thick and creamy when you cook them which is why they are perfectly good for soups, stews and sandwich spreads.

In order to serve a tasty and good-looking salad at your next BBQ party, I have a salad recipe for you which is full of vitamins and nutrients: the yummie rocket salad with kefir and lentils.

Do you have everything? This is how to do your kefir rocket salad yourself!

  1. Cook the lentils with a little bit of broth and 350 ml water. As soon as the water starts to boil, you can let the lentils simmer for about 10 minutes
  2. Cut the onion into thin slices

  3. Cut the pear into quarters and remove the core

  4. Mix the kefir with the oil and season it with a pinch of pepper, salt and chilli flakes

  5. Put the rocket salad, the onions, the pear and the lentils into a bowl and stir everything well

  6. Serve the salad on plates, garnish with the kefir dressing and serve some fresh ciabatta bread

Ingredients

  • 100ml self-made probiotic milk kefir made from organic kefir grains
  • 150g red lentils
  • 1 red onion
  • 1 pear
  • Ciabatta bread
  • 200g rocket salad
  • 3 table spoon oil

Instructions
