Is there anything better than cultivating your own vegetables, harvest them and process it by yourself? Cucumbers, radish, salad and tomatoes, everything thrives and prospers perfectly at this warm temperature. Especially tomatoes are modest plants which can be easily cultivated even by beginners. With regular watering and a sunny place on your balcony or terrace you can soon harvest tasty read bullets.
Did you know that the tomato fruit, similarly like the cucumber, is actually a berry? It is therefore a fruit and a vegetable at the same time.
The tomato plant belongs to the class of the solanums, same as aubergines, potatoes and paprika. Also the origin of its name seems interesting to me. The term tomato is derived from the Aztec word xitomatl, in Austria you call it Paradeiser or Paradiesapfel (paradise apple) and in Italy it is known as pomodoro (literally golden apple). Funny that in Italy and Austria you associate it with an apple.
There are over 3000 different types of tomatoes in the world. Small, big, long, oval, yellow, green, black, red and so on. The number of sorts continues to grow because new breeds are found again and again. And did you know that you shouldn’t store tomatoes in your fridge since they will lose their aromas? Better store them at a dry place at room temperature. I prefer to nibble the small and sweet cherry tomatoes but I also like the dried version in salads and sauces.
Tomatoes can be used in so many different ways, whether on pizza, in salads, soups or as I love to eat them: as a healthy spread for breakfast or dinner. Therefore I have a recipe for you so that you can make your own tasty tomato spread. Let’s start!
For this easy kefir tomato spread recipe you need those ingredients
- 4 cherry tomatoes
- 6 vine tomatoes
- 4 tablespoons tomato paste
- 100g cream cheese*
- 1 lemon
- 2 cloves of garlic*
- 1 red onion
- 3 tablespoons vinegar*
- A bit of olive oil
- 1 Ciabatta bread*
- 150 ml of Kefir – my delicious organic Kefir waits here* for you
Do you have everything? This is how to do your kefir tomato spread yourself!
- Mix the cream cheese and the kefir and season it with salt, pepper and lemon
- Peel the cloves of garlic and squeeze them with a fork or a garlic press. Add it to the kefir. The garlic cream is ready and can be put into a bowl.
- For the tomato topping cut the onion and the vine tomatoes into small pieces
- Give a bit of olive oil into a pan and roast the onions with the tomato paste
- As soon as the onion is glazed, add the vine tomatoes and boil it down with vinegar
- Season it with salt and pepper
- Mash everything with a hand blender until the mixture becomes homogenous
- Put the tomato topping on top of the garlic cream
- Cut the cherry tomatoes into small pieces for garnishment
- Add some spring onions and parsley
- The spread tastes best with fresh ciabatta bread

Instructions
