Today I want to extend this blog with another delicious milk kefir recipe.

Actually I would like to create kefir recipes all day long but regrettably time is limited. But finally I have made it. So I can show up with my yummy kefir spread. It is suitable for the rolls in the morning as well as a dip for snacks.

I really love the mixture of sweet cranberries and the spicy heat of horseradish. The cream cheese in connection with selfmade kefir makes the spread unbelievable  creamy.

As you already know I like to research certain ingredients. This time I found out astonishing  about cranberries. Yes, you can also make water kefir with cranberries. But I mean something different.

Did you know how cranberries are cultivated and harvested? The harvesting is very very interesting!!!

The cranberry is a 20 cm high bush with high demands on soil and climate. The best area for this plant is wet turf and moor soil. Three years after planting little fruits will grow for the first time. Two years later the cranberry plant reaches its full earning capacity. But it is worth waiting, because from the 5th year this cranberry plant bears fruits for next 100 years. In May the first leaves grow and the flowering time is vom June to July.

After this mature phase the harvesting time starts in October. There are two way to harvest the Cranberries. On the one hand the wet harvesting and on the other hand the dry harvesting. During the dry method harvesters make the job by carefully taking the cranberries off the bushes and place them on a conveyor belt. From there they were transported to big containers. This cranberries were sold as fresh fruits. The wet harvesting method is very exciting. The whole field of the cranberry plants will be flooded. Due to an artificial water vortex the fruits loose from the plants.

The cranberries have several air chambers and for this reason the fruits swim on the surface of the water and can picked up. These cranberries are use for jelly, sauces and juices. After cleaning the fruits they were cut and wetted with a syrup solution. This sugar makes the cranberry less sour and more sweet and therefore more pleasant to eat. After that the cranberries were dried.

I find the wet harvesting very exciting!

Ingredients

  • 300g cream cheese
  • 50ml selfmade milk kefir (viscous)
  • 120g dried cranberries
  • 2 EL horseradish
  • 2 EL small cut parsley
  • 1 EL small cut chive

Instructions

Just add all ingredients to the Vitamix and mix it at low speed. I use a Vitamix and I am very happy with it
