What could be better than having a tasty cake with your friends and family made of you selfmade milk kefir? This kefir cake recipe with fresh blackberries and your selfmade milk kefir is a dream come true. Very creamy and delicious. Try it yourself!

For this delicous kefir cake recipe you need the following:

Ingredients for the base

  • 3 eggs
  • 150g cane sugar
  • 5 Tbsp water
  • 100g wholemeal flour
  • 1 Tbsp baking powder
  • 50g walnuts or almonds

Ingredients for the toping

All ingredients ready? Then let´s go for the recipe!

  1. In the evening before baking, let the blackberries soak inti 20g cane sugar (we need the juice for the cake glaze)
  2. Beat eggs, cane sugar and water until creamy for the base and add all other ingredients afterwards.
  3. Let this dough bake into the oven on 180°C for 30min and let it cool down on room temperature
  4. Heat up 4 egg yolks, sugar, kefir and citrus in a pot
  5. Beat egg white and cream separately until they are stiff and creamy
  6. Heat up gelatine in an extra pot with 300ml water until it is all dissolved.
  7. Add gelatine to the egg yolk mixture and fold in the curd cheese carefully underneath
  8. As soon as the mixture starts to gelatine, add the beaten cream and beaten egg white underneath and spread on the cake base
  9. Now, add the blackberries without the juice on top ( Tip: If the mixture isn’t hard enough, let it cool down first for another couple of minutes.)
  10. Dissolve the cake glaze inside the blackberry juice (if you don’t have enough juice add some water) and heat it up
  11. Now spread the warm cake glaze on top of the blackberries
  12. Let the cake cool down over nigh or store inside the fridge for a few hours
  13. Now enjoy!

  • 150g milk kefir
  • 1 citrus
  • 300ml water
  • 3 packages of gelatine
  • 500g curd cheese
  • 200ml cream
  • 800g blackberries
  • 20g cane sugar
  • 1 glaze

Instructions
