What could be better than having a tasty cake with your friends and family made of you selfmade milk kefir? This kefir cake recipe with fresh blackberries and your selfmade milk kefir is a dream come true. Very creamy and delicious. Try it yourself!
For this delicous kefir cake recipe you need the following:
Ingredients for the base
- 3 eggs
- 150g cane sugar
- 5 Tbsp water
- 100g wholemeal flour
- 1 Tbsp baking powder
- 50g walnuts or almonds
Ingredients for the toping
- 4 eggs
- 170g sugar
- 150g milk kefir –get your kefir grains here*
- 1 citrus
- 300ml water
- 3 packages of gelatine
- 500g curd cheese
- 200ml cream
- 800g blackberries
- 20g cane sugar get your sugar from here*
- 1 glaze
All ingredients ready? Then let´s go for the recipe!
- In the evening before baking, let the blackberries soak inti 20g cane sugar (we need the juice for the cake glaze)
- Beat eggs, cane sugar and water until creamy for the base and add all other ingredients afterwards.
- Let this dough bake into the oven on 180°C for 30min and let it cool down on room temperature
- Heat up 4 egg yolks, sugar, kefir and citrus in a pot
- Beat egg white and cream separately until they are stiff and creamy
- Heat up gelatine in an extra pot with 300ml water until it is all dissolved.
- Add gelatine to the egg yolk mixture and fold in the curd cheese carefully underneath
- As soon as the mixture starts to gelatine, add the beaten cream and beaten egg white underneath and spread on the cake base
- Now, add the blackberries without the juice on top ( Tip: If the mixture isn’t hard enough, let it cool down first for another couple of minutes.)
- Dissolve the cake glaze inside the blackberry juice (if you don’t have enough juice add some water) and heat it up
- Now spread the warm cake glaze on top of the blackberries
- Let the cake cool down over nigh or store inside the fridge for a few hours
- Now enjoy!
