Forest berry kefir dessert – A “bear-strong” dessert

Hello my love,

a few days ago it was very hot outside and the sun was burning … So I decided to take a walk in the forest … A really good idea, as I found lots of hedges and shrubs with blackberries and raspberries on the way …. Of course I tasted the same ….

I just could not leave sweet berries like that. Luckily I had in my bag a small bag, in which I could reap the fruits … At home I found a few strawberries from my garden in the fridge. Perfect for a berry dessert. See for yourself what a delicacy dessert it was.

Berries are not only to be found in the dessert … They are also for breakfast a popular ingredient in my kitchen: Take a look at my milkkefir berry breakfast recipe.

For this delicious milk kefir recipe you need these ingredients:

  • 200 g wild berries
  • 50 g strawberries
  • 370 g organic milk kefir* (you can order the starter complete set here*)
  • 150 g of coconut blossom sugar* (You can order your organic coconut blossom sugar here*)
  • 200 ml of whipped cream
  • 2 packets of gelatine
  • 100 ml of water

For decoration:

  • a handfull strawberries

You have all the ingredients ready? Then we start immediately:

  1. Wash all the fruits and pat dry.
  2. Puree the berries, your organic milk kefir and the sugar by using a hand blender.
  3. Whip the cream until stiff with either a whisk or a nimble kitchen helper and place in the refrigerator.
  4. Put the gelatine with the water in a saucepan and heat with stirring until all the lumps have dissolved.
  5. Add one quarter of the berry-kefir-sugar mixture (from point # 2) to the gelatin in the pot and stir.
  6. Stir in the mixture from the pot to the remaining berry-kefir-sugar mixture and place in the refrigerator for about 15 minutes until it starts to gel.
  7. Then carefully fold in the whipped cream from the fridge under the berry-kefir mixture.
  8. Garnish the dessert with strawberries and serve.

Instructions
