Elderberry Kefir Pie – a fruity-sweet Pleasure with homemade Milk Kefir

Dear milk kefir fans,

today I am again very excited to show you another extraordinary delicious kefir pie. Now it is time for baking. So get the stuff together and preheat the oven:-)

Today I want to get straight to the point – Let’s make a unique kefir temptation!

For this delicious milk kefir recipe you need these ingredients:

For the cake base:

  • 3 eggs
  • 1 vanilla sugar
  • 80 g coconutblossom sugar* (you can get your own coconutblossom sugar here*)
  • 100 g butter
  • 125 g spelt flour Typ 1050
  • 1 tsp baking powder
  • 40 g marzipan

This is how it looks like if fresh kefir grains swim in milk. Making your own organic kefir at home is very easy:-)

For the cake covering:

  • 700g homemade milk kefir*
  • 700 g of your own organic homemade milk kefir* (you can order the starter complete set here*)
  • 400 ml cream
  • 3 sachets gelatine
  • 3 drops almond flavour
  • 180 g coconutblossom sugar* (you can get your own coconutblossom sugar here*)
  • 4 tbsp elderberry marmalade
  • 200 ml water

You have all the ingredients ready? Then we start immediately:

  1. Blend eggs, coconutblossom sugar and vanilla sugar until foamy.Holunder Kefir Torte – ein fruchtig süßer Genuss mit selbst gemachten Kefir
  2. Add butter, spelt flour, marzipan and baking powder and stir until you have a smooth mixture.
  3. Put the dough for the base into a well greased springform pan (26 cm Ø) and let it bake in the preheated oven on 160°C for 25 until it is a golden colour.
  4. Stir 350 g kefir, raw cane sugar and the almond flavour.
  5. Dissolve 1 ½ sachets of gelatine in 100ml water. Add some kefir and stir it.
  6. Store the kefir-gelatine mass for 15 min in the fridge until it starts to gel.
  7. Whip the cream with a whisk or a mixer until stiff.
  8. Take the kefir mass, fold in the whiped cream and spread it over the pie base.
  9. Put all für 30 min in the fridge.
  10. Mix the remainig 350 g Kefir with raw cane sugar and the elderberry marmalade.Elderberry Kefir Pie – a fruity-sweet Pleasure with homemade Milk Kefir
  11. Dissolve 1 ½ sachets of gelatine in 100 ml water, add some of the elderberry kefir marmalade and stir it.
  12. Put this elderberry-kefir-gelatine-mass to the remaining kefir, stir it and put it in the fridge until it starts gel.
  13. Take the elderberry-kefir-mass and fold in the stiff cream.
  14. Pour the elderberry-kefir-mass on the pie where the white kefir mass already is.
  15. Place the pie over night in the fridge.
  16. Now the pie is ready to be eaten.

Ingredients

  • Ingredients for the base:

  • 3 drops almond flavour

  • 4 tbsp elderberry marmalade
  • 200 ml water

Instructions

Blend eggs, raw coconutblossem sugar and vanilla sugar until foamy.

Add butter, spelt flour, marzipan and baking powder and stir until you have a smooth mixture.

Take the elderberry-kefir-mass and fold in the stiff cream.

Pour the elderberry-kefir-mass on the pie where the white kefir mass already is.

Place the pie over night in the fridge.

Now the pie is ready to be eaten.
