As with other cultures such as Kefir, Kombucha & Co., they are not standardized laboratory goods. Our homemade natural sourdough from spelled is active and therefore so valuable. The naturally occurring microorganisms ensure that the bread rises beautifully and that no additional baker's yeast is required. A huge plus for the people of us who suffer from a baker's yeast allergy. This traditional and simple process enables us to ensure that our organic sourdough contains no artificial colors or preservatives.
