Milkkefir – Walnut Cream Cake – A heavenly mix of plum jam and walnuts

Hello my dear kefir fans,

I´m pleased to share this new kefir cake recipe with you. It’s so delicious and easy to prepare. 

For the next Sunday coffee with family / friends the perfect opportunity to try this kefir recipe.

If you hear “Cake” you may think “oh no, that sounds like a lot of work …” but this recipe is really quite simple. So let’s start immediately …

For this delicious milk kefir recipe you need these ingredients:

For the cake base:

  • 300 g wholegrain spelled flour
  • 250 g butter (soft in pieces)
  • 5 egg yolks
  • 100 g coconut sugar* (you can easily order this online here*)
  • 1/2 packet baking powder
  • 1 packet vanilla sugar

For the cake covering:

  • 250 g plum jam
  • 5 egg whites
  • 100 g coconut sugar* (you can easily order this online here*)
  • 1 tbsp. Custard
  • 210 g walnuts* (chopped) (You can order your own organic walnuts here* online)
  • 1 packet of cream pudding
  • 355 g organic milk kefir* (you can order the starter complete set here*)
  • 1 pinch of Himalaya-Rock-Salt* (you can order your own organic rock salt here* online)
  • 100 g of butter
  • 1 egg

You have all the ingredients ready? Then we start immediately:

  1. Grease the two springforms (including the rim) with a little bit of butter and lightly sprinkle with flour.
  2. For the preparation of the cake base, separate the eggs (put egg whites aside) and use only the egg yolk.
  3. Place the ingredients egg yolks, coconut sugar, wholemeal flour, baking powder, vanilla sugar and butter in a mixing bowl and use a dough hook to make a dough.
  4. Divide the dough and place in the prepared Springforms and spread evenly on the ground with your fingers.
  5. Preheat the oven to 160° with circulating air.
  6. Brush the two cake bases with the plum jam.
  7. Beat the egg whites with 80 g coconut sugar (of the 100 g for the toppings), the custard and the salt in a new bowl with a hand mixer to a stiff mass.
  8. Distribute the egg white evenly on the plum jam.
  9. Now cover both cake base with the walnut pieces.
  10. Now bake both bases at circulating air 160 ° for 30 minutes and then let both base cool down.
  11. In the meantime, put your organic milk kefir and cream pudding into a saucepan and heat with the remaining coconut blossom sugar (20 g) while stirring.
  12. Add the egg yolks and soft butter to the heated pudding and stir in.
  13. Put the first ground on a cake plate and spread the pudding cream on it.
  14. Carefully place the second base on the pudding cream.
  15. Serve & enjoy!
