What about enjoying a tasty freshly baked fruitcake in your garden today? We created a quick and easy water kefir cake recipe for you and your guests. Present your selfmade water kefir in a special way with a delicious fruity vegan kefir cake.

For this delicious Kefir fruit cake you need:
For the base:
- 150ml organic waterkefir made of real Japancristals – you can get your organic water kefir here*
- 115g flour
- 75g cane sugar*
- 3 tbsp sunflower oil
- 1 package vanilla sugar
- 1 tbsp baking powder
For the toping:
- 50g vegetable margarine
- 2 tbsp powdered sugar
- For the toping you can use all fruits you like. We used:
- 1 handful currants
- 1 handful raspberries
- 2 kiwis
- 3 slices of pineapple

- Stir flour, cane sugar, sunflower oil, vanilla sugar, baking powder and water kefir together
- Grease the baking tin with margarine and distribute the dough evenly
- Bake 15 min 180°C
- Take out off the oven and let it cool down for 1-2h
- Cut fruits into little pieces
- Mix 50g margarine and 2 tbsp powdered sugar together in an extra bowl
- Distribute the cream evenly on the cooled cake base
- Put the fruits on top of the cream
