What about enjoying a tasty freshly baked fruitcake in your garden today? We created a quick and easy water kefir cake recipe for you and your guests. Present your selfmade water kefir in a special way with a delicious fruity vegan kefir cake.

For this delicious Kefir fruit cake you need:

For the base:

For the toping:

  • 50g vegetable margarine
  • 2 tbsp powdered sugar
  • For the toping you can use all fruits you like. We used:
  • 1 handful currants
  • 1 handful raspberries
  • 2 kiwis
  • 3 slices of pineapple

  1. Stir flour, cane sugar, sunflower oil, vanilla sugar, baking powder and water kefir together
  2. Grease the baking tin with margarine and distribute the dough evenly
  3. Bake 15 min 180°C
  4. Take out off the oven and let it cool down for 1-2h
  5. Cut fruits into little pieces
  6. Mix 50g margarine and 2 tbsp powdered sugar together in an extra bowl
  7. Distribute the cream evenly on the cooled cake base
  8. Put the fruits on top of the cream

Ingredients

  • 115g flour
  • 75g cane sugar
  • 3 tbsp sunflower oil
  • 1 package vanilla sugar
  • 1 tbsp baking powder
  • 150ml water kefir
  • This is what you need for the toping
  • 50g vegetable margarine
  • 2 tbsp powdered sugar
  • For the toping you can use all fruits you like. We used:
  • 1 handful currants
