For this delicous kefir blueberry cake recipe you need the following ingredients:

For the cake base:

  • 100g butter
  • 75g brown cane sugar*
  • 200g wholemeal flour
  • 1 egg
  • 1 package vanilla sugar

For the cake toping:

  • 300g self-made probiotic milk kefir made from organic kefir grains – get your kefir grains here
  • 1 glass blueberries
  • 500ml milk
  • 1 packages vanilla pudding powder
  • 170g sugar
  • 2 eggs

Do you have all you need? Then let´s go!

  1. Mix butter, cane sugar, egg, flour, vanilla sugar and baking powder together and form a ball out of it
  2. Now put the cake ball inside the fridge for half an hour
  3. Cook a pudding out of 500ml milk, 170g sugar and 2 packages of vanilla pudding powder
  4. Add 2 egg yolk and your milk kefir to the pudding. Beat egg white until it is frothy and fold in underneath the pudding mixture.
  5. Spread the dough in a greased spring form (ca.22cm diameter) and add the pudding/milk kefir mixture.
  6. In the end, add the blueberries on top of the cake. Bake the cake 70min on 180°C.
  7. Let the cake cool down and serve
