Milk Kefir

Spelled whole grain bread with sunflower seeds and milkkefir – full grain meets fresh milkkefir

I greet you my kefir friends,

last week I was invited to a friend’s dinner. There was next to a very tasty colorful salad a homemade bread. This bread was still lukewarm as it came fresh from the oven. It was so delicious and crispy … a baker could not have baked it better himself.

At the thought of it comes to me immediately the smell of fresh bread in the nose … .mmmmhh. So it happened that I stood in my kitchen on the last Sunday morning to bake my own bread for breakfast with family and friends. I got inspired by my storage cupboard and of course refined the dough with kefir … .It obviously tasted all, as unfortunately only a few crumbs are left 😉

For this delicious milk kefir recipe you need these ingredients:

  • 250 g spelt wholemeal flour
  • 1 teaspoon bread spice ground (optional)
  • 100 g of bananas (you´ll not taste them later)
  • 150 g organic milk kefir* (you can order the starter complete set here*)
  • 250 g Whole wheat flour
  • 200 g sunflower seeds
  • 1½ teaspoon Himalaya stone salt* (You can order your stone salt here*)
  • 1 teaspoon blossom honey* (you can order your own organic honey here*)
  • 400 ml lukewarm water
  • 1 cube of fresh yeast (40 g)

useful accessories:

  • cake form* (30x12x10 cm) (you can order your own high quality cake form here*)
  • baking paper
  • Cooling Rack

Variant: You can also bake this bread with 1 package dry yeast (9 g).
Then you put the dry yeast by step 2 with the flour to the warm water.

You have all the ingredients ready? Then we start immediately:

  1. Lay out the cake pan either with baking paper or grease with oil and then sprinkle with flour.
  2. Add the water to the Thermomix-mixing pot and crumble the fresh yeast in small pieces into the pot and heat at 37 ° C for 2 minutes to level 1,5.
    → Without Thermomix: Put the lukewarm water in a big mixing bowl and stir in the yeast in small crumbles in the water until they are dissolved.
  3. Now add the banana with the flour into the mixing pot and mix on Level 4 / 5 sec.
    -→Without Thermomix: Put the banana with the flour to your mixing bowl and mix it well.
  4. Add your organic milk kefir, sunflower seeds, salt, honey to the mixing pot and mix everything into a dough (3 minutes / kneading).
    –>Without Thermomix: add the other ingredients to the large mixing bowl and mix with dough hook to form a dough.
  5. Now fill the dough in the prepared box and let it rise for 45 minutes in a warm place without draughts.
  6. Shortly before the end of the dough time, preheat the oven to circulating air at 200 ° C.
  7. Put the cake form in the oven and bake the bread at 200 ° C for about 45 minutes.
  8. After baking, remove the bread from the oven and let cool on the wire rack.
  9. After about 10 minutes, fall the bread from the form.

    Hi there! Looks like a great recipe. I wanted to ask if wholemeal flour is necessary for making this bread. Can I just use whole wheat flour? Thank you!
