Last time I went to the supermarket, I found coconut water and I was thinking about preparing a tasty fermented drink. For this reason I want to show you something very special today: selfmade Coconut Kefir!
But why should we prepare Kefir with Coconut water?
Very important is this Kefir recipe with fresh coconut water* which is made of a green coconut. To get one of those delicious green coconut water, the coconuts are already harvest after half a year of growing. But please do not confound Coconut water with coconut milk* Coconut milk is made of the pulp of an one year old coconut. It is a tasty rarity in Germany but in other southern countries it’s a daily drink. Even top-ranking athlets do know about the isotonic potential of coconut water.
It has low carbs and it contains a lot of important minerals and vitamins as potassium, magnesium, iron, calcium and vitamin C. In contrast to other Iso-Drinks, coconut water contains those important ingredients in a natural way.
Remarkable: Coconut water with its nutrients is very similar to our blood. Therefore, it is used in tropical regions -if there is no other possibility- as human blood serum.
This information was so interesting form me, that I was very excited to share those facts with you.
Now we finally get to the point how to prepare coconut water.
For this delicious drink you need:
- Organic Waterkefir for 1 liter (30gr Japancristals) – you can get your organic water kefir here
- 1 liter organic coconutwater*
- 2-3 slices organic citrus
If you already prepare water kefir with kefir crystals, you have all you need at home. For those Kefir newcomers: this is where you find all important information about how to prepare my own waterkefir at home.
Are you ready for ther recipe? Here it comes:
- Fill your fermentation vessel with 1 litre of coconut water. Tip: buy some more coconut water to have a taste. It’s very delicious!
- Add your Japan crystals (30gr or 3-4 Tablespoons) without water kefir – to your drink
- Put the citrus slices into the vessel. It is important to add these ingredients to acidify the mixture and to avoid negative microorganisms. You can add some citrus juice in the and if you like the taste.
- Lock your fermentation vessel but make sure that the upcoming carbonic acid is able to escape
- Place your coconut kefir in a warm place
- Your drink is ready after 1-3 days
- Pour the drink into bottle or in a glass through a sieve
- Take out the citrus slices and enjoy your drink
- Rinse of your Japanese crystals in the sieve with cold to lukewarm water
- Clean up your fermentation vessel thoroughly with dish soap
In the end clean it one last time with hot water. - Now you can start again with the recipe if you liked that drink.

Have you noticed that we prepared the whole drink without adding sugar?
Those kefir grains do not need any more sugar adding because the natural coconut water sugar is already enough. Now, our drink contains all those valuable ingredients of coconut water but also probiotic lactic acid bacteria and yeasts!
I love the sweet-and sour taste of this kefir variation. With carbonic acid the Kefir drink turns out to be an exotic tingly taste experience. Very delicious!
